Philosophy of my Modern Northern Cuisine

Nature is fundamentally so varied, that nowhere in the world are there two places which have the same cultivation situations. The soil is the „soul“ of a region and is a reflection of the special climatic conditions present.
Here in northern Germany it is the coastal climate with its mild winters and moist summers as well as the sea currents which influence the special growing conditions
We voluntarily set the frame of our cooking style very narrowly, so that only products from north Germany are to be found. We use the potential of wild nature as well as suppliers who only grow organic produce.
The menu is developed in the close context of the present season. This is the origin of the authentic flavour which is always pure and clear cut. Wild herbs, vegetables and fruit play a large role in our dishes.
The saltwater fish come from the North- and Baltic Seas, freshwater fish from Plön Lake and the meat from organic Farmers in Schleswig-Holstein County.
Through new thought processes by the development of our dishes as well as the use of modern cooking techniques, a new style of both cooking and eating has come into existence.
